Prep the filling
Dice the tomato, slice the green onions, and peel and mince the garlic. Combine with the cumin, sugar, lime juice, cheddar, mozzarella, and softened cream cheese. Mix until evenly combined.

Roll up
Lay a tortilla flat and spread a line of filling across the center. Roll it up tightly and place seam-side down in a baking dish so it won't unroll. Repeat with remaining tortillas and filling.

Bake
Bake in a 350°F oven for 15 minutes, then remove and serve.
