Beet and Carrot Slaw

Method

Peel the beets and then shred with a large grain cheese grater.

Peel the carrots and shred the same size with the grater.

You should have about 2 cups of each.

Place a rag on the countertop and then spread the veggies on the rag before placing another rag on top.

Repeat the layers until you have all the shredded vegetables having their moisture absorbed by the rags.

Mix the rest together and then mix it all and store in a non-plastic bowl (beets stain almost all plastics!) Chill.
