Black Bean and Corn Soup with Veggie Bacon

Method

    Heat the oil.

    Chop the onion and green pepper and fry in the oil until soft.

    Add the boullion, water, beans, and carrot, along with the cumin, rosemary, and garlic powder.

    Simmer on low for 30-45 minutes.

    Meanwhile cook the ear of corn and cut the kernels off.

    Dice the bacon.

  7. 07

    Add the corn and bacon and simmer 15 minutes.

  8. 08

    Shred the cheese.
