Black Bean Enchiladas with Ancho Chilies

Method

    Orient the solar oven to the sun and let get up to about 200 oF.

    Then put the beans, the water and ancho chili peppers in and let them cook for about 3-4 hours until the peppers and beans are very soft.

    Drain the beans and peppers but reserve 1 c. chili infused water.

    After that step, which can be done a different day, put the oil and onions into the solar oven and saute for about 30 minutes.

    Add the garlic, the broth, the tomatoes, the cumin and let cook for 2 or so hours.

    Mix the peppers with this new mixture in a blender and blend until smooth.

    Add lime, cilantro, red pepper and blend again with the 1 cup of reserved pepper liquid.

    Put some of the blended liquids and peppers into a casserole dish and then layer in the tortillas, beans, liquid, and repeat.

    Put back into the solar oven and heat until warm.
