Bread Salad

Method

Heat an oven to about 275 oF and place the cubed bread on a baking sheet and bake for about 20-25 minutes while stirring and flipping every 5 minutes or so.

Meanwhile, shread the lettuce and peel and mince the garlic.

Thinly slice the cucumber and chop the cilantro.

Mix all of the above in a medium sized bowl.

Mix the lemon juice, olive oil, vinegar, and pepper in another small bowl.

After the bread is toasted, mix with the veggies and then whisk the dressing and mix it all together.
