Chicken Crepe Casserole

Method

  1. 01

    Mix the first four ingredients together until smooth.

    Heat a 6 inch skillet with a little oil and then place about 1/4 c. of the batter in the hot pan and swirl to cover the bottom.

    Cook about 1-2 minutes and then flip over and cook another 20 seconds.

    Remove from heat and layer in wax paper if you aren't using immediately.

    Heat the T butter in a small pan and then add the onion.

    Cook until soft, about 4 min before whisk in the flour.

    Continue to mix and heat about 3-4 minutes over low heat.

    Increase heat to medium and then pour in the cream, a little bit at a time, with constant whisking.

    Continue adding the cream and mixing until it is thick and bubbly.

    Stir in 1/4 c. crushed crackers and the greens, quorn pieces, parmesean cheese, and pepper.

    Place about 1/4 c. of this mixture near the edge of the crepe, laid out like a log and then roll it up in the crepe.

    Place this in a lightly oiled pan and repeat until they are all rolled up.

    Pour a little milk over the top and then add the rest of the cracker crumbs.

    Bake in an oven for about 35 minutes at 350 oF.
