Remove the stems from the broccoli and lightly steam the broken apart crowns for about 2-3 minutes.

Drain.

In the warm pan, place the butter and heat under low heat until melted.

Stir in the tapioca and stir.

It will look like this will be far too runny at this point but then mix in the cold broth and the cream and the mirin.

Place the broccoli in the bottom of a baking dish and pour half the sauce over the top.

Thinly slice the quorn breasts and lay on top of the sauce and then mix the parmesan into the remaining sauce.

Pour the sauce over the chicken and then bake 45 minutes or so uncovered.
