Creamy Broccoli Soup with Cheddar

Chop and then steam the broccoli for 3 minutes.

Add the kale and steam until limp.

Drain.

Peel and chop the 1/2 and onion.

Peel and mince the garlic.

Saute until soft, but not brown in 1/2 T butter.

Puree the broccoli, kale, and fried onions and garlic until smooth in a processor.

Melt the remaining butter in a saucepan.

Stir in the flour and mix with heating on low for about 3-5 minutes.

We used whole wheat flour and it was not too dominant.

Add the thyme.

Slowly mix in about 1/2 cup of water at a time and add the broth powder at some point.

After all the water is in, mix in the cream.

Then add 1/4 of the cheese at a time and continue to stir until all melted.

Season with black pepper.
