Curried Sweet Potato Pancakes

Shred the sweet potatoes into a bowl.

Dice the onions and fry in a little oil until dark brown and carmelized, about 20 minutes of cooking.

This step can also be done in a solar oven in about 2 hours.

Mix everything together once the onions are cool.

The tricky part here is that the sweet potatoes don't hold together like potatoes due to the lack of starch so you have to balance the stickiness of the egg with the dry properties of the flour.

You want a batter/dough/mix that will hold together firmly when you scoop some out and then grad a small ball in your hands.

Heat the oil in two fry pans, about 1/4 in deep in each one.

Once the oil is hot, carefully drop a ball of the mix about 1 inch in diameter into the oil and let fry.

Add a bunch more around the edges of the pan, leaving the center free for flipping them.

Once the bottom is deeply brown and firm, carefully flip over using a spatula and flatten.

Let fry another 3-4 minutes and then remove with the spatula and let drain on a wire rack that is on top of a baking pan with edges to capture the oil.

Fry in small batches until they are all done.
