Method

Finely shred the cabbage after removing the tough outer leaves.

Peel and shred the carrot with a grater.

Peel and thinly slice the onion.

Heat the onion and the 1/4 c. of vinegar on low and stir frequently until almost all the liquid is evaporated, leaving a thick syrup.

Mix all together and chill.
