Dried Mushroom Gravy

Method

    Melt T butter in a small saucepan.

    Peel and mince the onion and saute this in the butter for about 5 min on med-low heat.

    Add the water, the bay leaf, and the four mushrooms and simmer for a half hour, covered.

    Strain out the solids, reserving the liquid for the second phase of cooking right before you need the gravy.

    Remove the mushrooms and cut up into small pieces, discarding the stems.

    Discard the onions.

    Heat the remaining butter on very low.

    Whisk in the flour and cook for about 2-3 minutes.

    Slowly whisk in the reserved liquid in small batches.

    Add the soy sauce, basil, salt replacer, and black pepper, to taste.

    Heat with whisking until thick.
