Frozen Cucumbers and Vinegar

Peel and halve the cucumber.

Remove the seeds and dice them up before placing them in a small plastic container that can hold about 2.5 or more cups.

Use the rest of the cucumber for another recipe, like the yogurt salad on later on.

Peel, halve, and mince the onion.

Mix everything together.

Some notes, if you want it more tart, then reduce water and add more vinegar.

If you want sweet and sour, then add another teaspoon of sugar replacer.

I like mine spicy so I add a lot of white pepper but tastes may vary.

Freeze.
