Garlic Eggplant Stir Fry

Method

    Peel the eggplants and cube them in about 3/4 to 1" cubes.

    Roll on cornstarch in a small plate.

    Deep fry until golden brown and then drain on a towel.

    Fry the cashews in the peanut oil until slightly browned.

  5. 05

    Remove with a slotted spoon and drain on a towel.

    Mix the sauce together.

    Dice the green pepper and slice the water chestnuts (if they are not pre-sliced.

    Heat the garlic and ginger for 1 minute, stirring constantly, mix in the green pepper and stir fry for 2 minutes.

    Mix everything together and stir fry until warm.
