Gluten Free Dumpling Stew

Method

  1. 01

    Melt T of butter in a large saucepan.

    Peel and dice the carrot.

    Peel and dice the onion.

    Dice the potatoes and celery.

    Saute all in the butter until the onion is soft.

    Add 2 c. of water and simmer the vegetables about 10 minutes until they become soft.

    Sift the 1. c. rice flour with the baking powder and then mix in eggs and enough water to form a thick ball.

    Use a large spoon to drop balls of the dough onto the stew, adding more water to the vegetables if the moisture seems low.

    Cook uncovered for 10 minutes.

    Cover and cook 10 more minutes.

    Next, make a gravy using the other T of butter/oil by melting it on low and then stirring in T rice flour and the boullion.

    Slowly add in water with constant stirring until you have a nice thick gravy.

    Pour on top of the dumplings and vegetables.
