Method

Heat up the water for about 1.5 minutes in a microwave then pour it over the TVP and cover with a lid and let sit.

Peel the tomatoes and chop them.

Saute the onion and red pepper in the olive oil until soft.

Before the onions turn brown, add in the chopped tomatoes, minced garlic, bay leaf, black pepper, and mustard.

Heat and simmer, partially covered, until the sauce begins to thicken.

Remove the bay leaf.

Mix everything together and put in a lightly oiled bread pan.

Bake at 350 oF for 1 hour until set.

Let cool briefly.
