Gluten Free Zucchini Pancakes

Method

    Shred the zucchini with a cheese grater.

    Peel and mince the onion.

    Beat the two eggs together and then mix all of the rest of the ingredients together other than the oil.

    Add the 1/2 cup brown rice cereal with this mix and then add more until you reach a slightly dry dough that sticks together and isn't too wet.

    How wet is too wet?

    If you can't shake it off a spatula easily, you don't have enough cereal.

    Heat the oil in a fry pan and then fry batter in T amounts on both sides until brown.
