Gomen Sega (modified vegetarian version of Ethiopian Stew)

Method

    Clean and chop the mustard greens.

    Cook for 10 minutes in only the water sticking to the leaves.

    Drain and let cool.

    Peel and dice the onion.

  5. 05

    Remove the stem and seeds and pith from the green pepper and then chop the flesh.

    Saute TVP with the rest and add the water after the niter kibbeh has melted.

    Add more water if the mixture starts to char or stick to the pan, up to 2 cups total.

    Add mustard greens and let simmer until dry, taking about 1 hour.
