Mild Roasted Peppers with Goat Cheese

Roast the peppers in the broiler of your oven, turning often, until completely blackened and the skin is loosened.

Place the peppers into a stockpot with a lid and let cool down with their own steam until the skins are very loose.

Then peel the peppers and discard the skin before finely chopping the pepper flesh.

While roasting the peppers, wrap the garlic head in tin foil and place in the oven until the outer flesh feels soft.

Also let cool before peeling the cloves of garlic and mixing in with the peppers.

Crumble the goat cheese into small pieces if you bought a large whole piece and then mix everything together.
