Mostly Solar Scalloped Potatoes

Heat the potatoes on the stove, just covered with water, with the lid on the pot until boiling.

Reduce heat and simmer for 10 minutes and turn off the heat and leave the lid on.

Let cool for about 30-60 minutes to let them continue to cook in the residual heat.

Drain.

You can pause here until the sun comes out and you have about 3 hours to cook...

Thinly slice the potatoes.

Heat the butter on low in a small saucepan until melted.

Stir in the whole wheat flour and stir about 3-4 minutes.

Slowly add the cream in 1/4 cup amounts, stirring constantly and letting it heat up uniformly.

Add the T mustard and stir.

Remove from heat.

Grease your casserole dish with oil lightly.

Layer in half the potatoes and half the onions.

Pour half of the cream mixture over the top.

Add the next layer of potatoes and onions before covering with cream.

Cover and bake in your solar oven at about 200 – 250 oF for 1 to 1.5 hours.

Remove the cover and bake 2 more hours.
