Pizza Roll Up

Method

    The dough: Heat the milk in the microwave for about 35 seconds on high until it is warm, but not hot.

    Mix in T sugar and the yeast and let sit until it is foamy (Max likes to run around the kitchen yelling, "Wake up!

    Wake up, yeast!" during this) Pour the foamy mixture into a bowl with 1 c. of the flour and 1/2 t salt.

    Mix well with a spoon.

    Mix in the T of oil and the 1 cup water and then begin mixing in the rest of the flour with a spoon.

    When all the flour is mixed in, start kneading and continue to add flour to keep it from sticking.

    After kneading for 6-8 minutes, roll in oil and put in a bowl covered by a towel.

    Let rise about 1 hour.

    Punch the dough down and knead in 1/2 t sugar.

    Put back in the bowl and let rise again for another hour.

    Lightly flour the counter and then roll out into a large rectangle about 1/4 in thick.

    The filling: Mince the green pepper and onion.

    Steam the kale until tender and then finely chop.

    Mix the TVP with 1/4 c. hot water and let soak in.

    Mix everything together that is not in the dough and season with pepper.

    Spread the filling over the rectangle of dough, leaving about 5 inches at one narrow end where you will fold the bread over.

    Roll up the dough from one end to the other end (where no filling is) and transfer to an oiled baking sheet.

    Bake in a 350 oF oven for about 45 minutes, checking to make sure it does not brown too much.

    Remove from the oven and let cool 15 minutes before slicing swirls of the bread off.
