Quinoa Veggie Salad

Method

    Heat the quinoa and 2 c. of water/broth and simmer uncovered until almost all the water is absorbed.

    Cover and let sit for 5 minutes.

    If you are in an hurry to use it at a cool temperature, spread out and freeze about 10 minutes.

    You can prepare the corn if it is raw by soaking in water and grilling for about 7 minutes.

    Or, use frozen or leftover corn.

  6. 06

    Cut up all the other veggies.

    Make the dressing by mixing the juice of the lemon, soy sauce, and olive oil in a small bowl.

    Season to taste.

    Mix all and re-season.
