Method

Peel the potato and chop about 1/4 " dice.

Boil in water until tender crisp.

Drain.

Rinse the beets under the faucet to remove tendrils and then slice thinly.

Peel and slice the carrot thinly.

Slice the celery thinly.

Mix all together and then chill.
