Drain and rinse the sauerkraut before shaking it dry in a colander.

Peel, half, and then thinly slice the onion.

Bake covered in a 350 oF oven for 30 minutes, dotting with about T of butter and 2 t sugar substitute when you start.

Uncover and stir.

Add more butter if it looks dry and add a 1 t sugar substitute.

Continue this over and over until you have a dark golden brown dish where some of the strands of cabbage may have turned even black.

This typically takes about 2 hours to reach the very dark stage.
