Smoked Black-Eyed Pea Tomato Stew

Peel and dice the onion.

Peel and mince the garlic.

Dice the green pepper and celery.

Heat the margarine or butter in a large saucepan and mix in everything you diced so far and cook on medium low heat for about 5-10 minutes until soft but not browned.

Mix in the tomatoes, plus one can of water and then everything else.

Cook at a simmer until the black-eyed peas are done, which will be about 30 minutes.
