Sour Stem Relish

Method

    Removing the leafy parts is easiest by using a knife to cut along the stem and form a giant U of leaf that will remain while you pull out the stem by your fingers.

    Rinse the stems in a colander to remove any sand and then mince the stems.

    Peel and mince 1/2 a medium onion.

    Combine everything in a large pot and heat to boiling while getting your canner up and boiling.

    This will make about 4 pints of relish so you should sterilize those jars and equipment as you heat the main pickle body.

    Can according to general practices and process at boiling for about 20 minutes and then make sure all the cans sealed.
