Southwestern Salsa and Sausage Bread Casserole

Slice and break the sourdough bread into small pieces, about 1/2 inch per side.

Drain the tofu, wrap it briefly in a rag to drain some of the excess moisture for a few minutes and then mash with the salsa and oregano.

Peel and dice the onion.

Peel and mince the garlic cloves.

Dice the sausage into small pieces.

Heat the margarine in a medium fry pan and add the onion, garlic, and sausage.

Fry until the sausage begins to brown.

Mix everything together in a large, lightly oiled casserole dish and then bake at 350 oF for 1 hour.
