Summer Vegetable Thick Stew

Method

  1. 01

    Remove the husk from the corn and boil the corn in water for about 4 minutes.

    Remove, let cool, and then cut off the kernels of corn with a knife.

    Peel and dice the onion in about 1/8 inch dice.

    Heat the oil and begin frying the onions.

    Peel and mince the garlic before stirring that into the onions Dice the summer squash in about 1/8" dice and mix that in Cut the celery to the same size and stir in.

    Peel and cut the carrot to the same size and stir in.

    Mix in the 28 can of tomatoes and then add in 1/2 can of water as well.

    Stir in the pasta and cook until the pasta is tender.

    Season to your taste.
