Sweet Roasted Pepper Gazpacho

Method

    Roast the pepper in the broiler and keep turning until the skin is all blackened.

    While you do this, wrap the full head of garlic in tinfoil and let it roast in the oven for about 20 to 25 minutes.

    Remove the pepper and put in a covered pot to sweat.

    Let the garlic cool.

    Remove all the skin from both the garlic and pepper.

  6. 06

    Remove the seeds and core from the pepper and place all the flesh of the garlic and pepper in a food processor.

    Add the crushed tomatoes, salt, paprika, basil, wine vinegar, Worcestershire sauce, and the 2 cloves of fresh minced garlic.

    Process until smooth in the food processor.

    Pour into a bowl and add the rest of the chopped veggies and chill until ready to eat.
