Sweet Tomato, Red Pepper, and Garlic Sauce

Method

    Broil the tomatoes and red pepper in the oven, turning with tongs often.

    Wrap the garlic in tinfoil and place it in the oven, not the broiler.

  3. 03

    The tomatoes will split and you should pull them out before the skin is blackened as the flesh should still be somewhat firm.

    Turn the pepper often and keep going at it, pulling out the garlic after about 30 minutes.

    The pepper will be completely black and you should pull that out as well.

    As the roasted veggies are removed, place them all in a covered pot to steam and cool down.

    The tomatoes will be ready to be peeled first as they came out first.

    Peel and remove the top stem areas of the tomatoes.

    Finely chop and place in a colander to drain.

    Peel and finely chop the garlic.

    When the pepper is cool, peel, seed, and finely chop it.

    Mix all together, season with pepper and a little salt before serving.
