TVP Nachos
Method

Mix the TVP with the 1/2 cup of water after heating the water in a microwave on high for about 40 seconds.

You could also use 1/2 pound of fried and drained ground meat (chicken, beef, etc.) Mix all the spices together and then mix these in to the TVP.

Chop the green pepper and chop the green onion.

Heat the oil in a fry pan and add the green onion and chopped green pepper.

When those are soft, add the TVP, beans, and spices.

Add more oil or water an necessary to keep from sticking as the mixture is stirred and fried.

Chop and add the tomatoes.

Juice the lime and add the juice with sugar.

Shred the cheddar cheese to reach one cup total.

Layer some chips on a plate.

Layer on some of the bean, pepper, TVP mixture, top with cheese.

Repeat until done.

Let sit about 5 minutes to cool (especially if you have kids).

Top with lettuce.
