Twice-Baked Mustard Potato Hordeurves

Method

    Baste the potatoes with oil and then put in a 450 oF oven.

    Continue to cook, turning occasionally until cooked through and crispy on the outside.

    Let cool.

    Cut in half and then scoop out all but about 1/8 inch of potato from each one using a melon baller.

    Mix the insides with the milk and mustard in a processor and run until smooth.

    Scoop the filling back into the potato halves.

    Top each one with a small piece of basil and then bake again at 350 oF for about 20 minutes.
