Vegetarian Eggrolls

Method

    Finely slice the cabbage and then cross cut in 1 inch pieces.

    Heat water to boiling and then cook the bean sprouts for 2 minutes before draining and rinsing in cold water.

    Peel and shred the carrot with a cheese grater.

    Peel and thinly slice the onion and cut crosswise in 1 inch pieces.

    Heat the butter in a large fry pan and then add the cabbage.

    Cook about 5 minutes and add the carrots.

    Stir occassionally as you also add the onion, scallion and garlic powder.

    Continue to cook until wilted somewhat.

    Add the rest of the ingredients, including the bean sprouts and cook until the liquid is absorbed.

    Cool.

    Then roll the filling into eggroll wrappers and set aside until you deep fry them in about 1 1/2 inches of cooking oil.
