Veggie Noodle Pho with Tofu

Method

    Heat the water with the boullion.

    Add all but the tofu, mushrooms, green onion, and noodles.

    Simmer for 1 hour.

    Heat 1/2 cup of water and soak the dried mushrooms until soft enough to dice after removing the stems.

    Slice the tofu about 1/4 inch thick and dry between rags.

    Then dice in 1/4 inch dice.

    Mince the green onion.

    Right before mealtime, heat up water and then cook the noodles until tender.

    Divide the mushrooms, tofu, noodles, and green onions among three bowls.

    Then ladle the broth over the top.
